Easy (& Healthy) Cinnamon Apples

Here is a healthy 15-minute cooked apple recipe. You don't need sugar or flour to enjoy the great taste of warm, spiced apples this fall. Cooking all your fruits and vegetables (especially this time of year) assists the beginning of your digestive process - so it takes less energy away from the rest of the body's organ systems to keep you more energized through the day. And it doesn't take away from the nutritional content either! 🍎🍏 I use honey crisp for this recipe, but obviously you can choose your favorite type or whatever you have on-hand.

When you leave the apples UNpeeled, you gain the the most nutrient dense part of the fruit, with 332% more vitamin K, 142% more vitamin A, 115% more vitamin C, 20% more calcium, and up to 19% more potassium than a peeled apple.

  • 3 apples, chopped into 1 inch cubes
  • 2 Tablespoons water
  • 1 Tablespoon coconut oil (or ghee, or butter)
  • 1 Tablespoon honey   (or maple syrup)
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon 
  • 1/8 teaspoon fine sea salt

1. Place apple pieces into a pan with water. Cover and cook over medium heat for about 5 minutes, stirring occasionally, until apples begin to soften.

2. Add coconut oil to the pan, stir until apples are coated. Cook for 5 more minutes, stirring occasionally. 

3. Add honey, vanilla, cinnamon & salt and stir until well-mixed. 

4. Cook for approximately 5 more minutes, stirring every minute, until apples reach your desired softness. 

Enjoy as a breakfast item, snack, side dish or dessert.

Store leftovers, covered, in the refrigerator for up to 5 days.
